Breakfast Sidekick Recipe

Breakfast Sidekick
Thanks to fiber from Del Monte canned fruits and whole wheat bread, this Breakfast Sidekick is an enjoyable healthier version of breakfast casserole. Jake Meyer, a middle school student, from our Exemplary Award winning school created this recipe contest standout!

Breakfast Sidekick
Servings: 12-15
½ c. margarine, softened
1 ½ c. sugar
5 eggs
3 egg whites
1 tsp. cinnamon
3 Tbsp. lemon juice
1 (15.25 oz. can) Del Monte Crushed Pineapple in Juice, drained
1 (15 oz. can) Del Monte Healthy Kids Enriched Fruit Cocktail, drained
10 slices day-old whole wheat bread, cubed
12 -15  Del Monte Pineapple Slices (used juice packed)
1 ½ c. vanilla yogurt     

Steps:
1.      In a large bowl, cream together margarine and sugar.
2.      Beat in eggs, egg whites, cinnamon and lemon juice.
3.      Stir in pineapple, fruit cocktail and bread cubes.
4.      Pour into a greased 13” x 9” baking dish. Bake at 325° for 35-40 mins. or until a knife inserted near the center comes out clean.
5.      Serving suggestion: Place a pineapple slice on serving dish. Spoon yogurt over slice. Top with a serving of “Breakfast Sidekick.”

This healthy kids recipe is a 2010-11 Stirring Up Health National Middle School Recipe Contest Winner. Family and Consumer Sciences (FACS) teacher, Suzanne Nozaki, and her class at Pahoa High and Intermediate School, Pahoa, Hawaii, received an Exemplary School Award for exceptional teaching skills using the Stirring Up Health National Middle School Recipe Contest.
